Cardamom is indigenous to India and Sri Lanka, where it is found in the wild. It has since been cultivated across tropical Asia. The plant grows in dense clumps with up to 20 leafy shoots and can reach heights ranging from 2 to nearly 6 meters.
The fruits are pale green to yellow and have an elongated, oval shape. Each fruit contains three chambers filled with small, aromatic seeds, each about 3 mm long. Upon drying, the fruits and seeds turn a straw-brown color and are widely used as a flavoring agent.
Indian cardamom is highly regarded in international markets and is available in various grades, including ‘Alleppey Green Extra Bold’ (AGEB), ‘Alleppey Green Bold’ (AGB), and ‘Alleppey Green Superior’ (AGS), all of which are well-known worldwide. Cardamom oil, extracted from the seeds, is a valuable component in food preparations, perfumery, health foods, medicines, and beverages.
India has a long history of exporting cardamom, particularly to Middle Eastern countries, where it is a key ingredient in ‘Gahwa,’ a strong cardamom-infused coffee that is an integral part of daily life and hospitality in the Arab world. Indian cardamom is especially favored in the Middle East, as well as in Japan and Russia, for its distinct and enriching properties.
