This spice, used by the ancient Egyptians, is even mentioned in medical records found in their tombs. Traditionally, fenugreek seeds were valued more for their medicinal properties than for culinary purposes. The botanical name, Trigonella, refers to the seeds’ triangular shape, while foenum-graecum means ‘Greek hay,’ hinting at its historical use as cattle feed. This hardy herb features light green leaves, grows 30-60 cm tall, and produces slender, beaked pods ranging from 10-15 cm in length. Each pod contains 10-20 small, smooth, yellowish-brown seeds that are about 3 mm long, oblong in shape, and have a distinct groove on one corner, giving them a hooked appearance.
